Ugh. I face that same question every day. What do I want for lunch? There seem to be so many breakfast options, and dinner is just a whole different element. But lunch? Lunch seems like it is reserved for dinner leftovers, and since most of the time we do not like dinner, we are out of luck when it comes to our midday meal. While rummaging through the refrigerator, I found some leftover turkey. This seemed doable with a bit of creativity. What if we tried to make leftover turkey quesadillas?

An Easy After Thanksgiving Lunch:


Is it me or do most kids eat about anything when it is in a wrap? One of our major staples when we were younger was just a plain cheese quesadilla. In fact, I think that was the first thing I ever made by myself. But perhaps it was time to experiment and add some more flavor.

When we found this recipe that included cranberry sauce, I was pretty curious. I think of cranberries and so bitter, but when I checked the back of the can and saw the sugar amount, I was reassured.

What Cheese for Leftover Turkey Quesadillas?


What is the deal with Swiss cheese? I am a full-blown cheese lover, but this one confuses me. But since my goal is to try new things, I decided to be brave and use it instead of my normal sharp cheddar. Honestly, I actually liked the combination as the cranberries were a bit sweet and this helped to make it less overwhelming.

Assemble the Quesadilla:


You can either cook these in a frying pan or you can use the griddle. Since we make pancakes every Saturday, our griddle is just easier. Without turning on the heat, I started to layer my quesadilla. First, I put on the cranberry sauce, cheese, then turkey. Make sure you use enough cheese for it to hold everything together.


This was such an easy and quick lunch! I am going to try using different leftover meats and whatever cheese we have for future solutions to the lunch dilemma. Maybe all of our leftovers won’t go to the dog after all.

How to Make Leftover Turkey Quesadillas for the Perfect Lunch

Cook Time: 3 minutes
Total Time: 3 minutes

Ugh. I face that same question every day. What do I want for lunch? Finally, these leftover turkey quesadillas are the perfect answer!

Ingredients

  • 2 Flour Tortillas
  • 1/2 to 1 Cup Shredded Swiss Cheese (Or Cheddar)
  • 1/2 Cup Shredded Turkey
  • 1/4 Cup Cranberry Sauce

Instructions

  1. Place tortilla on a griddle or shallow skillet.
  2. Layer with 1/4 cup cranberry sauce, 1/2 to 1 cup shredded cheese and 1/2 cup shredded turkey.
  3. Turn heat to low, and watch to see when the cheese has melted. Using a spatula, check the underside of the tortilla and flip when it is lightly browned.
  4. When both sides are toasted and cheese is melted, remove from heat and allow to cool a few minutes before cutting.
