
While stuffing pistachios into our mouths, we realized that our Dad’s birthday was coming up, and it was time to plan his special dinner menu. Our first choice is always sushi. After we failed pretty severely on making our own, we decided it might be best to order out. But what about the most important part of the meal: the cake? Dad’s favorite is our go-to chocolate birthday cake, so that was settled. But deciding on the frosting was a bit trickier. As I crunched down on my nut, I wondered if there was a pistachio frosting for kids that would be easy.

Why Pistachios?
We have a confession to make. Ever since Mom bought pistachios for our new muffin recipe, we have become completely addicted. Although our fingers are raw from cracking those hard shells over and over again, there is something so satisfying about working to get the treasure inside.
Ingredients for Pistachio Frosting:
We chose such an easy recipe, this is really a staple buttercream with the added bonus of pistachio pudding mix added for flavor.

Every time I open a packet of this pudding, I am in awe that my mom lets us eat it. I mean, look at that color!

And if looked even more neon after adding the milk and mixing it into a paste. It looks like some kind of science experiment.


Pro Tip: Use the Mixer Guard with Powdered Sugar:
As we dumped all of that lovely powdered sugar into the mixer, I saw the look on my Mom’s face. Maybe, just maybe, we have started the mixer in the past without putting the guard on the mixer. What is it about that stuff that makes it go flying everywhere?

We did have to stop it a few times and clean out the whisk. And when I say, “have to” I may mean that we wanted to lick it clean over and over.


This Pistachio Frosting is Great for Decorating
Even though we could have eaten this entire bowl with some graham crackers, our cakes were cooled and ready to be decorated. We have had some interesting challenges decorating in the past with regular buttercream, but because this had the added pudding mix, it was super easy to pipe.

And thankfully, the color calmed down with all of that sugar, so we were not scared to eat it.


Super Easy Pistachio Frosting for Kids to Make
Confession: We are addicted to pistachios. And cake. It only made sense to make an easy pistachio frosting for kids.
Ingredients
- 1/4 cup Instant Pistachio Pudding
- 1/3 cup Milk
- 1/2 cup Butter (Softened)
- 3 cups Powdered Sugar
Instructions
- Whisk together the odd-looking green pudding mix and 1/3 cup milk in a small bowl. Mix completely until thick, and the milk is dissolved.
- In a mixer, combine the pudding mixture, 1/2 butter, and 3 cups powdered sugar. Make sure to put your guard on the bowl and beat until light and fluffy.
