Any kid will tell you that adding sugar to almost anything will make it kid-friendly. And salmon is no exception. For this recipe, I need to give credit to our Mimi. When we were little she would sneak us into the kitchen while making dinner and allow us to sprinkle sugar onto the salmon. It was our little secret. For kids who are afraid to try something like pink fish, this was a great way to get us to try it. Her kid-friendly salmon quickly became our favorite meal.
Since salmon is not always the cheapest meat option, we look every week for any sales at our grocery store so we can convince our Mom to put it on the menu. Look at the size of this fish!
How easy is Kid-Friendly Salmon?
The other best part of having salmon for dinner is that it is so easy to prepare! We only added some olive oil, garlic, lemon, and sugar. How easy is that?
We will warn you, however, that you can overdo it when it comes to the sugar. Perhaps we may have had some fails in which we thought that if some sugar tasted good that A LOT of sugar would be even better.
It ended up competing with the fish and created an odd taste. We suggest a light sprinkle over the top.
After rubbing in the garlic with the olive oil, squeezing some lemon juice, and sprinkling the sugar we put it into the oven for about 12 minutes. Then, we checked the temperature to make sure it hit 145 degrees F.
What Are Those Green Spots?
We noticed right away that there were some green spots on our fish. Uh oh. We thought we put mold onto our fish! Before Mom could see it and get mad, we did some research and found out that our garlic turned color because of a chemical reaction to the lemon juice. Chemistry strikes again. Thank goodness this did not mean that we ruined the fish!
Salmon is for sure one of my favorite dinners and I like it best on its own. However, I will admit that adding some avocado and mango salsa on top was very tasty.
