One of the best things about where we live is that we get to enjoy four different seasons. Although summer is definitely my favorite, there is something really cozy about fall. Plus, we are lucky enough to have two apple trees in our front yard. Although they are not the prettiest looking, they taste delicious. But, we have been picking them for weeks and the apples are piling up on the counter. We used some to make our bunny some apple doughnut holes, but that barely made a dent. I thought about making an apple pie, and I might when I build up the nerve, but the idea of putting cinnamon apples on pancakes seemed just about the perfect idea for breakfast. After making some adjustments to the original recipe, I think this is the best fall apple recipe for pancakes. It is like having “fall” on a plate.
What Kind of Apples to Use?
Although I think you could use any variation, we have Golden Delicious and Honeycrisp. They are both a bit tart, and I think worked out just perfectly for the sweetness of this recipe.
We started with peeling the apples. We tried to have a competition of who could make the longest peel, but we did not get very far. I decided to chop them up for easy bites, but I think thin slices would also work great.
Next, I melted the butter and cinnamon in the pan. It made such a neat design.
Then, I added the apples, sugar, and a bit of water. Right away I knew I was going to love this fall apple recipe because of the way it smelled.
Do Not Over Cook the Apples:
You want to make sure you only cook the apples until they get a little tender. They could all turn mushy very quickly, which would probably still taste fine, but the texture might be a bit off.
While they cooled I prepared my Saturday morning pancakes and homemade whipped cream. It was a lot of dishes and I was hoping this would be worth it!
Two Problems with this Fall Apple Recipe:
First, I made the mistake of pouring some maple syrup on my apple pancakes, but it was too sweet. Between the cinnamon apples and the sweet whipped cream, the combination was perfect as is without any other toppings.
Two, you might need some help deciding when to stop eating. This was my favorite breakfast of the year, and I had a hard time stopping. I think next weekend I will make them for our waffles.
The Best Fall Apple Recipe for Pancakes

Ingredients
- 4 Cups Chopped Apple (about 5 small apples)
- 2 Tablespoons Butter
- 1 Teaspoon Cinnamon
- 1/3 Cup Brown Sugar
- 3 Tablespoons Water
- *1 Tablespoon Cornstarch + 2 Tablespoons Water
Instructions
- Peel and chop your apples.
- Melt butter and cinnamon over medium heat.
- Add apples, sugar, and water. Simmer for about 4-6 minutes until the apples are tender, but not mushy.
- *If you would like your mixture to be thicker, mix cornstarch and water into a slur. Add to apples and let it cook for one minute more.
- Allow to cool before turning your pancakes into dessert.
